    APPLE CIDER PHEASANT

    HERE IS A TASTY TREAT FOR YOU UPLAND BIRD HUNTERS.

    1 PHEASANT CLEANED ,SKINNED AND QUARTERED

    1/2 CUP OF BUTTER

    1 CUP OF CIDER

    1 TABLE SPOON OF CINNAMON

     SALT AND PEPPER

    2 LARGE APPLES PEELED, CORED, AND CUT INTO LARGE CHUNKS

        BROWN THE PHEASANT  WITH BUTTER IN A FRYING PAN FOR ABOUT 6 MINUTES. REMOVE THE PHEASANT FROM THE PAN AND PLACE IT IN A DUTCH OVEN AND ADD APPLES, CINNAMON, AND CIDER. COVER AND SIMMER AT 325 FOR ABOUT 75 MINUTES OR UNTIL THE PHEASANT IS TENDER. SHOULD SERVE ABOUT 4 PEOPLE.
